Virgin Voyages is spicing up the seas with Rojo by Razzle Dazzle, a Spanish-inspired dining concept set to debut aboard Brilliant Lady, the newest ship in the brand’s adults-only cruise fleet.
The innovative restaurant builds on the success of Lucky Lotus by Razzle Dazzle, the Chinese fusion venue introduced on Scarlet Lady in late 2024. The new culinary experience is helmed by acclaimed chefs Justin Severino and Nate Hobart, known for their work at Morcilla, a celebrated Spanish venue in Pittsburgh. The duo now brings their signature ingredient-driven, shareable dishes to sea.
Culinary Bites from the Spanish Region
By day, the restaurant will serve a Spanish-American fusion brunch while in the evening transforming its menu for dinner serving diverse courses from the regions of Spain. Virgin Voyages tapped Barcelona-based Onada Consulting to curate Rojo’s beverage program, which draws inspiration from Spain’s most iconic bars in cities like Madrid and San Sebastian.
The cocktail menu showcases regional ingredients while the wine list features Spanish standouts including Rioja, Ribera del Duero and Albariño. Brunch offerings include cava spritzes, sangrias and vermouth-based cocktails.
The restaurant’s interiors reflect the communal dining culture designed for both shared and intimate meals. The reimagined Razzle Dazzle space mirrors Virgin Voyages’ broader goal of creating inclusive, memorable onboard experiences for its “Sailors.”
“Virgin Voyages set out to be a disruptor from day one, and our culinary program—with Michelin-chef-designed menus and boundary-pushing creativity—was always central to that mission. Rojo by Razzle Dazzle is just one of several culinary updates coming to the fleet. Extra Virgin will soon feature new Italian dishes like seafood risotto and roasted monkfish, while Korean BBQ venue Gunbae is adding new dishes to its menu. Rojo will launch alongside Brilliant Lady’s debut in the fall of 2025, coinciding with the release of seven brand-new onboard entertainment productions.
